What the business says

We have a number of existing systems specifically designed to prevent these issues, including:
• Digital HACCP monitoring system
• Production Control System to manage product holding levels, temperature, availability and quality
• Digital Manager Control Systems and Structured Manager Travel Path mapping to identify and correct issues during the shift
• A comprehensive Food Safety Policy and manual that stipulates our FIFO and date-control standards for stock rotation and secondary shelf-life management
• Scheduled cleaning and deep-clean schedule, supported by a management verification system.
• Level 3 Food safety training and certification for our managers and our team members
• An internal and third-party Food Safety & Brand Standard auditing system.

Following the inspection, we completed a full review of the findings and implemented a comprehensive corrective and preventive action plan. This included strengthening management accountability, reinforcing daily food safety verification, additional management and team training, increased Regional and Operations Excellence oversight, and further internal food safety auditing.

A follow-up internal food safety inspection was conducted on 14 October and identified no Low or Critical findings. We have also completed further Food Safety training with the Cardiff management team and introduced a Food Safety Inspection Tool Kit to support continued verification of standards.

Our focus is on ensuring the improvements made are fully embedded into the restaurant’s normal day-to-day operation and that a strong food safety culture is consistently maintained.
